Pumpkin Muffins!

Happy Thanksgiving!! I love this time of year and most of all I love baking! I am usually not a huge fan of recipes, it takes a lot of the fun out of cooking for me…but here is a recipe I found and followed yesterday and made for the best gluten free muffins I have ever had! By the way, I was thinking these would be a great snack to stick in the back of your bike jersey for a nutritious snack…...

Gluten Free Pumpkin Muffins:

Ingredients 1 3/4 cups Red Mill Gluten Free All Purpose flour 1 1/4 cups sugar 1 tablespoon baking powder 1/4 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon ginger 1/4 teaspoon allspice 1/8 teaspoon ground cloves 1 cup pureed pumpkin (fresh or from a can) 1 tablespoon soy yogurt 1/2 cup soymilk 1/2 cup vegetable oil 2 tablespoons molasses 1/2 cup apricots

Directions Preheat oven to 400 F. Grease muffin tins with vegetable shortening or spray on oil.

Sift together dry ingredients (flour through cloves). In a seperate bowl, wisk together wet ingredients (pumpkin through molasses). Pour wet into dry and combine. Fill muffin tins 2/3 of the way. Bake for 27-30 minutes, till a toothpick inserted in the center comes out clean.

Iron Will and 70.3

Monday, November 13th the Austin American Statesman had a cool feature article called “Iron Will”. The best part was that Pandora got her picture in the paper. They took the pictures out on the Greenbelt trail, people were going by on their mountain bikes and I swear she was gloating. She’s a total ham.

I got sick last week with a icky case of strep throat and could not make the trip down to Florida 70.3 World Champs. I was very bummed about it but there was just nothing I could do. However, it was great to see Tri Dubai tearing it up once again though, strong congrats to Craig for the title, Simon for a strong second (even if he is old :)), Chris solid in 4th place and Lisa…my goodness Lisa Bentley! Placing 2nd only three weeks after her big 3rd place in Hawaii! Also, it was great to see Sam winning the women’s title. Sam and I were roomates at an awesome homestay in Florida waaay back in 2001. It has been great to see her improve going all the way to the top ever since. Also props to Austinites, training buds James Cotter and Pat Evoe. James had a huge breakthrough race placing 8th amongst the pro men. Awesome! Pat was third age grouper overall- hello Pro ranks! Way to go everyone!
